“Bon in da Bon” 2016 by Bio Vio

A 100% Pigato organic wine. “Really good” and with beautiful aromatic herbs notes

“Bon in da Bon” is an organic wine, “really good” as the dialectal term (‘bon’ which means good) proudly suggests.
Wine: Bon in da Bon
Denomination: DOC Riviera ligure di Ponente Pigato
Vintage: 2016
Winemaker: Azienda Agricola BioVIO di Giobatta Vio known as “Aimone”, Bastia-Albenga (SV)
Varieties: Pigato 100%
Alcohol content: 14% vol.
Available bottle formats: 0,75 lt. bottles
Harvesting: the grapes are from the Marixe area, from a selection of the best Pigato vines (over 60 years old plants) growing on marly and ferruginous soils and a particular micro-climate characterised by temperature swings at nighttime that enrich the wine with a magnificent olfactory heritage. Row farming, pruned-spur cordon-training. Late harvesting at the end of October.

Vinification: Cryogenic maceration for 24 hours followed by a soft pressing and fermentation using indigenous yeasts in steel vats under temperature control.

Aging: 6 months in steel containers and 3 months in the bottle.
Tasting: Luminous and intense straw-yellow with golden reflections. The olfactory range, rich and intense, begins with ripe yellow peach, loquat and citrus-fruits perfumes, followed by beautiful aromatic herbs notes, especially sage and thyme. Daisies and chamomile notes come up next, echoed by pleasant mineral hints of silica and saltiness; ending with a slight almond aftertaste. To the palate it is dry, intense with a wide volume and a good persistency. It lays on enveloping roundness perfectly matched by a fresh-sapid element even if its mineral espression stands out against acidity.
Food matching: The elegant, fruity and marine tones of this great ligurian wine which encloses all the chatacteristics of its sunny territory, are a triumphant match for sish-based first courses, fish soup or even “Corzetti with butter and sage”. I tried it with “baked seabrim in a salt crust” and the result has been perfect.

Serving temperature: between 10°and 12°

Storage: Enjoyable right away, it will be able to bring emotions and gift us with intriguing perfumes for a long time.
