I Soli: the 2017 Pigato by Foresti

A well balanced bright wine, with an intense aroma. A perfect match for stuffed vegetables with aromatic herbs

Wine: I Soli Pigato

Winemaker: Foresti
Denomination: DOC Riviera Ligure di Ponente Pigato
Varieties: 100% Pigato
Alcohol content: 12,5 % vol.
Available bottle formats: 75 cl bottles and 0,375 cl bottles
Harvesting: Manual harvesting of the vineyards in Soldano, San Biagio and Camporosso areas, up to 250-300 m a.s.l., produced by 20 to 50 years old different vines plants.

Winemaking: the vinification process is made without skin contact, the grapes are separated from the raceme without being crushed, and pressed afterwards. Natural cold decanting of the sediments without any enzimes added followed by fermentation under controlled temperature. The wine is left on the lees for three months. Later it undergoes a complete malolactic fermentation.
Ageing: takes place in stainless steel containers until early March when bottling takes place; it takes at least a month and a half before the bottled wine can be placed on the market, starting from April of the year following the harvest.

Tasting: the wine has a very bright golden straw yellow color in the glass and is quite consistent to the swirl. To the smell it has delicate aromatic herbs nuances and mineral sensations. The opening notes are intense, complex and persistent. Firstly a ripe yellow flesh fruit: apple, pears and peach with overtones of citrus fruits like ginger. Going on with the tasting, it has yellow flowers scents like broom, wild fennel and saffron. The sip is fairly balanced and pleasant with a good persistence and lasting period. The freshness is lightly softened after one year in the bottle, but most of all it is balanced by a good plumpness and sapidity. The tasting and olfactive exam shows a dry, not too alcoholic, fresh and sapid wine with a subtle softness. To the taste the final notes are salty and iodised which recalls the sea in the distance, but at the same time feeling its influence closely.
