Not only Stoccafisso at Cantalupo

When a traditional food “marries” a good wine glass. The press report of an event to remember

The pots boil and receive us since our arrival in the car park. Everything is ready for the “not only stoccafisso” event, organized by the “S.Giovanni Battista Cantalupo 1907” association in Cantalupo (in province of Savona). This event is dedicated to the traditional ligurian food, the “stoccafisso”, which is going to “meet” ligurian wines and the local foods like oil and olives from the west coast.

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

We start with fried ravioli with a Lumassina wine called “Marie”, a wine that comes from the collaboration of the “Sancio” wine cellar in Spotorno and the farmstead “Praiè” in Andora, both in provinceof Savona.
Ancestral technique, good but turbid fermentation due to many yeasts that limit its acidity. Cool and sparkling, it’s very good to drink.

We continue with a “brandacojon”, a traditional ligurian food made with potatoes and stoccafisso (in the photo you can see what remains of it) cooked by the “Stoccafisso academy” of Imperia. We eat it with some Lumassina wine which comes from the “Buzzetto’s” vineyard (the Buzzetto is a little vineyard area between Spotorno and Finale Ligure)

After the brandacojon we have some stoccafisso with panissa (a typical kind of rice from Piemonte and Lombardia) and artichoke; the sommelier choses a wine from the “Praiè” farmstead. This wine is cool and its taste is a mix of loquat, clementine and cedro.

In the end we are arrived at the strong pont of this traditional cooking: the “Buridda”: a traditional ligurian food with fish, tomatoes, onion…
It was the “chosen one” for the “No limit Stoccafisso” event; it has such an strong taste associated with a red wine from the Arenzano d’Oneglia’s farm “Il Cascin” (Imperia)

Entertainers of the evening were Marco Tomassini and I, Francesco Zoppi (writers of the book “The Codfish Tale”, published by Tormena). We’ve illustrated to the public the press report of the codfishs’ course which, from the freezing northern seas, arrives on our tables here in Liguria throughout a long and amazing journey with a great history.
